The temperature of the cellar should keep a constant temperature, without fluctuating more than about 2 degrees within a period of 24 hours.

While no wines should be stored for any length of time at room temperature, remember that reds and white require different temperature for optimum taste. White wines taste better when they are colder, while reds are better slightly warmer, but still never served at room temperature.

The Humidity Factor

Something else to bear in mind when planning your wine cooling cellar is the importance of the humidity in the room. Humidity in a wine cellar is important for a number of reasons:

  • Humidity higher than 70% will cause mould on the corks and start to degrade the glue and the labels on the bottles.
  • Humidity lower than 50% will risk the corks drying out, which means that the liquid can start to evaporate out of the bottles through the corks. If oxygen gets into the bottles it may also start to ruin the remaining wine.

The other thing important to remember when installing a wine cellar is that most HVAC units do not add moisture or humidity to the air. You will need to consider adding a humidifier if possible one that is integrated into the cooling unit which will distribute moisture evenly in the re-circulated air.
